Yeah, that’s one of the biggest annoyances with ChromeOS - the moment you install browsers via the Play Store, they’re treated like Android apps. That’s why they behave like mobile versions.
If you want a full desktop experience, your best bet is to enable Linux (Crostini) on your Chromebook. I installed Firefox ESR via Linux, and it runs just like it would on a regular Linux desktop. You’ll get the full UI, better dev tools, and proper responsive views. Just a heads up - rendering might be a bit slower compared to Chrome.
